Budapest

The XXII. district of Budapest (called Budafok) is connected to the Gellért Hill by a several-kilometer-wide limestone lined bed of the Danube River. Since 2015, the roughly 10,000 square meter section of the district’s robust limestone cellar system has been the home of Sauska sparkling wines.

The naturally thick stone walls of these wine cellars call forth emotions and feelings of past times. Coupled with the perfect balance of fresh air and ventilation with no light penetration, our cellars are all reminiscent of the classic sparkling wine cellars of yore.
The temperature is naturally at a constant 12 – 16°C [53.6°F – 60.8°F] regardless of the season, with a relative humidity is around 80%.
This is the fermentation room where the dry base wines are fermented in Tokaj – Furmint, Chardonnay and Pinot Noir – arrive and begin being shaped into sparkling wines.

Méthode Traditionnelle is the classic way of making sparkling wines. In essence, the same bottle that is brought to your table is the same bottle in which the wine has had its final fermentation, then allowed to age for many years.
Let`s see how it happens:

Assemblage: blending

Assemblage: blending

Our grapes (Furmint, Chardonnay and Pinot Noir) complete their first fermentation at our Tokaj winery and become a range of still (dry) wines with various characteristics. They are then blended to create our range of styles. For our non-vintage, we add a certain amount of reserve wines (dry wines from past years) to ensure the consistency of Sauska Style.
EFFERVESCENCE: SECOND FERMENTATION AND MATURATION

EFFERVESCENCE: SECOND FERMENTATION AND MATURATION

Blends are bottled, with yeast and sugar, to start off the second fermentation. Sealed with a bottle cap, the wines ferment slowly, producing alcohol and carbon dioxide. Thus, the bubbles are born. As the fermentation proceeds, yeast cells die and interact with the wine to give it its taste and complexity.
RIDDLING AND DISGORGEMENT

RIDDLING AND DISGORGEMENT

Bottles are slowly rotated so the dead yeast cells descend and collect in the neck of the bottle. Traditionally this process was done completely by hand, now this process is done by machines. Upside down, the neck, containing the yeast (aka ‘spent lees’), is placed in a frozen bath, and opened. The pressure expels the yeast sediment in a frozen block from the bottle.

The sparkling wine’s desired sweetness level is adjusted by adding sugar.
Closure

Closure

The traditional closure is cork, wired down to secure the high internal pressure of carbon dioxide in the sparkling wine.
Lots of information, stories, history! And the retro installation at the end was incredible, a real time travel

Renewable Energy

The Sun itself is our most prominent collaborator from the first moment of the grape’s life until it becomes wine. The installation of solar panels at the Villány winery was a big step forward on our journey.

In Budapest, the cellar is our best friend: with its steady temperature of 12-16 °C regardless of the season, these massive limestone walls provide naturally cooled storage capacity all year round without putting unnecessary pressure on the environment.

The Secret Room

In 2015, Sauska purchased the nearly 400-meter section of the Budafoki Historical Cellar System, which became the heart of the current aging cellar. During the construction works, a quite uniqualy designed tasting room, presumably created under Socialism, was discovered. Due to the high humidity of the room, it was not ideal as for tastings, but anyone who entered here was immediately under its magic.

Therefore, we decided to imagine what could have happened here.

The installation, dreamed up by movie set designer Pater Sparrow and the Beat Film Team, is based on imagined events, keeping the strong atmosphere of the place focusing Hungary`s recent past, the 20th century. The 10-minutes visual installation evokes everyday life and great moments of the past century, mixed with concrete and abstract elements, both in sound and in sights, as a kind of time-traveling séance.

The installation is part of our cellar walk, cannot be visited independently, and is not recommended for our guests who are sensitive to light and noise.
