Villány Sauska: contemporary, functional, minimal

Press - 2017-11-23 12:04:34

You can see our attractive winery from the center of Villány which embrace the  style of  Szársomlyó and Jammertal vineyards.

The wineries have large working areas and cellars (7000 hectolitre/year) to avoid any compromise on optimal harvest time due to lack of space or equipment. Our tanks and fermenting bins hold 650 – 660 gallons so we can keep our base wines separtately at each vineyard. We use Clayver-ceramic wine fermenters and our fermenting capacity is 100 barrels. In our premium vineyards, we harvest in small M10 bins for a quick cool down and gentle press.

Our wooden cellar holds 1500 to 225-liter barrels. During the harvest, the incoming grapes go through a multiple hand and machine process: nothing but spotless, ripe and healthy berries can enter the container.

Grapes are genlty pressed in a large basket press. Stainless steel storage tanks can be cooled and heated. Our barrel cellar can also be heated and cooled for the optimal malolactic fermentation.

Our dominantly Hungarian and French barrels are made of oak that dried for at least three years.

We take pride in working closely with the best vintners and make decisions based on frequent tastings together. We also monitor and document the barrels development on a weekly basis.

Keeping each vineyards'  wines separately is the key to quality winemaking.

About our statue: Genesis, the Carrara-marble statue by Boldi in front of the winery has been been with us since our first harvest. It's voluptuous shape; cheerful roundness attracts not only the visitors, but we also to say hi to it every morning. We consider it our teammate and loyal keeper of our many harvest secrets.
